Firefighters put their lives on the line each and every day so that we can stay safe in our homes. It’s so heartbreaking to see these men and women lose their lives and sustain devastating injuries while doing such selfless work. One man who knows that all too well is Mississippi-based firefighter Patrick Hardison. While responding to a call for a massive house fire back in 2001, the roof caved in on him, and the scalding materials melted straight through his mask. The resulting injury changed his life forever. Hardison — always a kind and gentle family man — decided to dedicate his life to helping others. He suffered massive burns that effectively stripped away his entire face. Not only did the wound wreak havoc on his physical health, but it also destroyed his self confidence. With support from his family and the tireless physicians at NYU’s Langone Medical Center, Hardison underwent the most intense facial transplant procedure in medical history. This time-lapse video from Michael Shainblum begins simply enough — with beautiful, recognizable cityscapes shown alongside their mirror images. Then he flips the time-lapse photography genre upside-down (literally) with dazzling kaleidoscopic effects. Shainblum has been mirroring images for five years and spent four months working on “Mirror City,” using footage from Chicago, San Francisco, San Diego, Las Vegas and Los Angeles. “Many people visit these large cities every day, and all of these places have been shot and filmed, but I wanted to emulate these urban landscapes in a way that nobody has even seen before,” Shainblum’s Vimeo page reads. "Bubbleberries" are a type of small strawberry called the "musk strawberry" that were much more common in the 19th and early 20th centuries. They are admittedly better smelling and tastier than most strawberries in the supermarket. So what is their secret? If you buy strawberries in a shop today, it is almost certain that they will be the “garden strawberry”, a hybrid species of Fragaria × ananassa. This seems to have arisen quite fortuitously in 18th-century Europe, as an accidental cross between two imports into France, Fragaria chiloensis from the western side of America and Fragaria virginiana, from the eastern side of America. This hybrid acquired the characteristics of fruit that was both large and red, and over the centuries breeders have striven to produce strawberries with these characteristics, as well as others including long shelf-life and freedom from disease. The result is that today, with the assistance of air-freight, we can buy strawberries all the year round. This has come at a price, as genes for the production of key sensory molecules have been lost, which is why shoppers often complain that their strawberries have a rather bland taste. This is the result of a kind of “funnel effect”, a breakdown of genetic diversity -– inbreeding, if you like. Scientific researchers have made an intensive study of the hundreds of different molecules that contribute to the smell of strawberries. Strawberries get their flavor from a blend of odorant molecules -– they contain no single “strawberry-smell” molecule -– which is why there is so much variation in flavor from one species to the next. Experts talk about particular sensory characteristics of strawberries, which include caramel, fruity, green, milky lactone-like and buttery. There must be a balance of these in a fruit for it to smell right. For example, too much lactone leads to a strawberry that reminds you of a peach. Unripe strawberries have an excessive “green” smell, due to molecules like hexenal, the compound you smell when grass is cut. The caramel “note” comes from two molecules known as furaneol and mesifurane, while fruity smells come from a family of molecules called esters. Researchers have found that wild strawberries have more intense aromas and richer flavors, not just because they contain greater amounts of these molecules, but they also contain a wider range. Some molecules, such as the highly aromatic terpenoids, are only found in wild strawberries. This is where bubbleberries come in. We hear all the time about how our changing climate and increased pollution are affecting our oceans. From bleached coral to a complete loss of habitat altogether, the ocean is suffering. We don’t see it often, but under the surface the animals there need our help. Creating artificial habitats and reefs is one way people are tackling this problem head on. A group of artists and scientists got together to address the problem of shrinking habitat near the British Virgin Islands. What they did, though, defies description. First, they chose a run-down WWII ship called the Kodiak Queen to serve as the base of their new ecosystem. Shipwrecks often become places where marine life can thrive. Nike’s latest ad, “The Last Game,” in support of World Cup fever takes on a similar premise to the latest dystopian sci-fi movie. It pits man vs. the “perfect” clone — a soccer player that performs like a machine and is, supposedly, unbeatable. But they’re missing one thing: heart (or, as Nike puts it, the willingness to take risks). It’s sort of like a Gattaca that substitutes soccer for space travel. The best players unite to challenge the clones. We won’t spoil the ending, but lets just say it’s clear is Nike is reminding you that winning players are willing to take risks.
